Latkes (Potato Pancakes) NOTES : This is one of my favorites, and a discovery only since becoming a celiac. I like these best when you give the mixture an hour to rest, which produces a moist, creamy inside and a very crisp outside. If you cook them right away, they'll be crispy all the way through. Yield: "12 latkes" Start to Finish Time: "1:00" Ratings : Easy 0 Serving Size : 2 Preparation Time :0:30 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds russet potatoes 1 large onion -- peeled 2 large eggs 2 Tablespoons potato starch flour -- optional 2 teaspoons salt freshly ground pepper 1/4 cup vegetable oil Peel potatoes and the onions, then coarsely grate them both. Place the potatoes and onion in a strainer over a bowl, and squeeze out as much moisture as you can. Remove the strainer. If you have potato starch flour on hand, sprinkle it onto the potato mixture now, otherwise, tilt the bowl and let the liquid gently run away, returning the potato starch in the bowl to the potato mixture. Add the eggs, salt and pepper to the potato and stir well. You can cook immediately or let it sit for up to an hour, as you like. Heat the oil in a wide skillet, and when it is quite hot (about 360 degrees), drop about 3 Tablespoons of the potato mixture into the pan and flatten it with a spatula. Cook for a minute or more, until the bottom is a nice golden brown. Turn and cook the flip side. Remove with a slotted spatula and allow to drain on several layers of paper towel. You can keep them warm in a 200-degree oven while you finish cooking the rest.
